The holiday of Shavuot, which commemorates the receiving of the Torah with all-night learning and eating cheesecake, is next week and I’m so excited! Last year, I interviewed kosher cheesemaker Brent Delman, aka The Cheese Guy, on his business, products, and what makes cheese kosher. Read that in depth here.
A year later, I caught up with him to find out about his newest products, which include a two-year-aged grated parmesan shaker, fresher than any preservative-filled junk you’d find in the grocery store. For the more observant Jews out there, he has a new collection of “Super Kosher Cheeses,” which are Chalav Yisrael. Among these offerings are a Tilsit (gruyere style) and a creamy Burrata from Italy. 🍒 Recipe: Ricotta and Cherry Sweet Buns
I’m including a recipe from the Shavuot of Longing Cookbook, created by the Hostages and Missing Families Forum. They’ve been doing a tremendous amount of work to raise awareness for the ~120 people still held captive in Gaza. This cookbook contains 75 favorite recipes of the hostages, contributed by their families who miss them very much.
